Cook Vietnamese Ricestick Noodles

Use rice noodles to make a fresh and flavorful Asian soup.


Vietnamese rice stick noodles are made with rice flour and have a soft texture when cooked. The noodles are available in thin, medium and wide thicknesses and are used in a variety of Asian dishes, such as soup, stir fries, cold salads and spring and summer rolls. When preparing Vietnamese rice stick noodles, be careful not to overcook them or they will become too soft and mushy. In a matter of minutes, you can prepare an authentic Vietnamese meal using the rice noodles. Add this to my Recipe Box.


Instructions


1. Place the rice stick noodles in a bowl and completely cover them with hot, not boiling, water.


2. Allow the noodles to soak in the hot water for 15 minutes.


3. Fill a saucepan with water and add a sprinkle of salt. Bring the water to a boil and add the soaked rice noodles.


4. Boil the noodles from one to three minutes, or until they are just tender and translucent.


5. Drain the noodles in a colander over a sink and briefly rinse them with hot or cold tap water, depending on the type of dish you are making.
