Add shrimp to grits to create a delicious, southern-inspired meal.
Grits, or hominy, is a food staple in southern U.S. and is the official state food of South Carolina. Grits are commonly served with milk and butter, and can be either sweet or savory. Adding sauteed shrimp to the grits will create a hearty and filling breakfast, lunch or dinner. You can make the recipe your own with the addition of fresh flavors and seasonings, such as lemon juice, garlic and scallions. Add this to my Recipe Box.
Instructions
1. Bring 4 cups of water to boil in a saucepan. Add 1 cup of yellow stone-ground grits and cook for 20 minutes, or until all of the water is absorbed.
2. Stir 2 cups of shredded Cheddar cheese and 2 tbsp. of butter into the grits and cover the saucepan.
3. Heat 1 tbsp. of olive oil in a nonstick skillet over medium heat. Add 1 cup of sliced scallions, 2 tsp. of fresh lemon juice, 1 tsp. of garlic salt and 1 lb. of peeled and deveined shrimp. Saute the shrimp until it turns pink.
4. Transfer the shrimp into the pan of grits and stir to combine.
5. Ladle the shrimp and grits into individual serving bowls and top with chopped parsley.
