Groats are the nutritious, unprocessed kernels of buckwheat that are extracted from its inedible outer coating. Unlike wheat, groats are gluten-free. Groats have a delicious, nutty flavor and are a popular food in Russian and Eastern European cuisines. You can use whole or ground groats to prepare porridge, combine with vegetables, or cook as a side dish to accompany heavy meat meals. However, you must roast unprocessed groats before cooking, to remove the mild bitter flavor and enhance its nutty taste. Add this to my Recipe Box.
Instructions
1. Set 1 cup of buckwheat groats in a large bowl. Fill the bowl with water and wash the groats. Drain, rinse and set aside.
2. Heat a saucepan on high heat for four minutes. Add the buckwheat groats and stir constantly to prevent them from getting burnt.
3. Roast the groats for five minutes, or until they turn golden brown and exude a nutty aroma. Turn off the heat.
4. Add 1/2 tsp. of salt and 1 tsp. of butter, and mix well with the roasted groats. Use the roasted groats to prepare any groats-based meal.
