Low carbohydrate dieting has proved to be a highly effective way to shed pounds. However, many low carbohydrate dieters have trouble maintaining their new weight. Low carbohydrate dieting requires a permanent change in eating habits, such as consuming very small portions of bread, little sugar and even carefully monitoring fruits and vegetables. With all these constraints, it is not surprising that delicious fruit-based breads like banana breads have been, until recently, nearly out of the low carbohydrate picture. Instructions
1. Preheat the oven to 325 degrees Fahrenheit.
2. Spray the loaf pan with non-stick cooking spray. This will prevent your banana bread from sticking to the pan.
3. Mix two eggs and the cream cheese in a large mixing bowl. The batter should be thick, smooth and fluffy.
4. Mix in the remaining eggs. Add them one at a time and continue mixing steadily at a medium rate of speed.
5. Slow the speed of the mixer. Since you will be adding dry ingredients, you need to slow the mixer so that the flour and other powdery ingredients do not fly out of the bowl.
6. Add the bananas, protein powder, wheat flour, baking powder, sugar substitute and vanilla extract. Continue mixing until the batter is smooth and even in color and consistency.
7. Mix in the almonds and the wheat bran. These will add texture to your batter. Be sure that all the almonds are completely coated with batter before turning off the mixer and moving on to the next step.
8. Pour the batter into the loaf pan. Use a spatula to make sure that you get all the batter out of the bowl.
9. Bake for 45 to 55 minutes. You will know the banana bread is done when it pulls away from the sides of the pan and is firm to the touch in the middle of the loaf. One slice has 4.4 grams of carbohydrates.
