Le Cordon Bleu College of Culinary Arts in Los Angeles
This college, founded in 1994, partners with the prestigious Paris-based Le Cordon Bleu. Los Angeles Le Cordon Bleu students can earn an Associate of Occupational Studies diploma in Le Cordon Bleu Culinary Arts. Students learn classic techniques from professional chef instructors in small classes. They also obtain hands-on experience in the school's professional kitchens, campus restaurant and through externships. The school has two Los Angeles locations--one in Pasadena and one in Hollywood.

San Diego Culinary Institute
Students at the San Diego Culinary Institute can earn a cuisine diploma or a baking and pastry diploma. Students at SDCI learn about flavors, business, and fundamental techniques such as broasting, braising and saut ing. Class sizes are small; the school says classes will never exceed 16 students. Students learn from professional instructors who average 25 years in the business. Many of the instructors have worked in Paris, Tokyo, New York and London, according to the school's website. About 60 percent of the students at this school previously worked in or studied for a different career.

Santa Barbara City College-School of Culinary Arts and Hotel Management
Founded in 1909, Santa Barbara City College is a community college that serves the south coast of Santa Barbara County. Culinary arts students at Santa Barbara City College take classes in sanitation and safety, baking, culinary fundamentals and wine. A big part of the program is work experience. Students enroll in an off-campus work experience to supplement lab work and expose them to their area of interest. The school offers an Associate of Science in culinary arts or a certificate.
