Green peas, or field peas, grow large and full of sweet flavor that makes them an appropriate addition to salads, sandwiches and other recipes. Green pea sprouts contain vitamins E, C, B and A, iron, calcium, phosphorus, amino acids and protein. For sprouting, buy whole green peas and not split peas, which will not sprout at all. Instructions
1. Place your peas in a fine mesh colander and rinse them thoroughly. Transfer them to a wide-mouthed glass jar and cover them with water. Leave the peas to soak overnight, or for about 12 to 14 hours.
2. Drain and rinse the peas after soaking and then return them to the jar. Cover the jar with a light piece of breathable cloth and then keep the jar in a cool location away from direct sunlight. Rinse and drain the sprouts every 8 to 12 hours for 2 or 3 days, or until the sprouts reach the length you want.
3. Rinse the peas one last time and place them in the refrigerator. Eat your sprouts as quickly as possible. Toss them out if you notice a strange odor.
