Corn meal mush
is a cheap food to feed a family. Many older Americans may remember eating a bowl of hot mush on cold mornings when they were little. Made with either yellow or white corn meal, mush is similar to other hot, mushy foods such as cream of wheat, porridge, or hasty pudding. Although eaten often for breakfast, this tasty dish is suitable for anytime you want to make a simple and quick meal. Add this to my Recipe Box.
Instructions
1. Pour three cups of cold water into a saucepan and cook on the stove on high heat. Another way to cook mush is in the microwave. Combine the water and meal into a large microwavable bowl and cook between seven and nine minutes on high.
2. Mix the corn meal with one cup of cold water in a bowl and stir. Soaking the meal in cold water before adding it to hot water will help prevent lumps. When the water in the pan starts to boil, add the meal.
3. Whisk briskly to keep lumps from forming, until the mixture is mostly smooth. If you do find some big lumps, get a spoon and remove them.
4. Turn the burner down to low heat and put a lid on the pan. Cook the mush on simmer for 10 minutes or until it is as thick as you want. For a thinner mush, add more water.
5. Add the corn meal mush to bowls. Add some milk, sugar, and butter to your hot mush or just butter and salt, until it is seasoned the way you want.
