Grill Blackened Chicken


Grilling chicken is a healthy way to improve your diet. To make great blackened chicken, it comes down to the rub you use for seasoning. You can cook blackened chicken on an outdoor gas or charcoal grill. The key to a good tasting piece of chicken is to avoid overcooking and use the freshest cut of chicken breast to achieve top moistness. You only need a few minutes of preparation and less than 20 minutes of cooking to enjoy a good meal. Add this to my Recipe Box.


Instructions


1. Prepare your grill. If you choose to use a gas grill, you won't need much in the way of preparation. Just make sure to clean the grill and spray it down with cooking oil -- this will keep the chicken from sticking. If using a charcoal grill, be sure to light the charcoal about 20 minutes before you plan to grill. Clean the surface of the grill as needed.


2. Combine the seasonings you plan to use in a bowl. Mix the ingredients thoroughly and have a small taste. The mixture should not taste too salty; if it does, add some pepper. Pour the mixture into a large bag, place the chicken breasts in the bag, and shake well to coat evenly.


3. Place the chicken on the grill. For a gas grill, use medium to medium-high heat, and let the chicken cook on each side for five minutes. Cut a small piece of the chicken to ensure it is thoroughly cooked. You do not want to eat any raw chicken. You may need to place the chicken on the grill for a few more minutes on each side until done. If you use a charcoal grill, place the chicken on the grill while there is still some flame from the coals. Cover with a lid and let cook for five to seven minutes on each side. Again, test the chicken to ensure it is thoroughly cooked. Add to the grill for a few minutes on each side if needed.
