Old-fashioned molasses is made by the evaporation of sap in the sorghum plant. At one time, molasses was the only source of sweetness for some families as sugar was an expensive commodity not available to everyone. Molasses can be used as a substitute for both light and brown sugar or for half the white sugar called for in a recipe. The dark color of the molasses might give the result a different look, but it should taste just as delicious. Add this to my Recipe Box.
Instructions
Replace One Cup of White Sugar
1. Measure one cup of molasses into a bowl or cup.
2. Stir 1/2 tsp. baking soda into one cup of molasses.
3. Substitute the molasses for no more than one cup of sugar in the recipe. If there is baking powder in the recipe, it might need to be reduced or omitted completely.
4. Reduce the liquid called for in your recipe by 1/4 cup as the liquid from the molasses will replace this amount.
Replace One Cup of Brown Sugar
5. Measure one cup of white sugar into a bowl.
6. Add 1/4 cup of molasses and stir.
7. Substitute the mixture for the brown sugar in the recipe.
