Use Unbleached Flour

Unbleached flour is better for bread recipes.


Unbleached flour does not use chemicals such as benzoyl peroxide or chlorine gas to make the flour appear whiter, and it typically has a higher protein and gluten content, which is better for baking bread. Unbleached flour can be used in any recipe calling for flour. The taste difference is negligible, and it should work the same as bleached flour. This basic bread recipe works well with unbleached flour, which makes the crumb denser and the yeast work more efficiently. Add this to my Recipe Box.


Instructions


1. Stir sugar with lukewarm water in a mixing bowl.


2. Sprinkle yeast on top of mixture and wait five minutes to activate yeast.


3. Add the rest of ingredients to form a sticky dough. You may need to add more flour if dough is too wet or add more water or milk if it is too dry. Knead dough for about 10 minutes.


4. Form dough into a ball, and place back into bowl. Cover with kitchen towel and let rise for approximately one hour or until it has doubled in size.


5. Preheat oven 350 degrees.


6. Punch down dough, and knead for a few minutes adding a little flour.


7. Shape the dough into a loaf, and place it on a greased baking sheet. Let rise for another 30 minutes.


8. Bake for about 30 minutes or until golden. The baked bread should sound hollow when you tap it.
